In my quest over the years to produce the best mashed potatoes that I could I tried so
many recipes it's unbelievable and finally I learned the real trick and the real truth to the
whole thing. To make truly good light fluffy potatoes you have to break the starch chain.
Once that is done if you mess with it at all it will reform those chains and your potatoes
will become dense and thick. This recipe will teach you how to solve that little mystery
and you will soon be making the best lightest fluffiest mashed potatoes that you've ever
tasted in your life.
